Chef Yasu Tanaka
Yasu was born in Yamanashi Prefecture, Japan.
After graduating from college, he spent two years in Mozambique, Africa, to teach how to use a computer to the local people. During that time, the children asked him to make sushi and he started making sushi by himself.
After his return from Africa, he decided to make his experience and what he taught himself in Africa his profession, so he enrolled in the Tokyo Sushi Academy.
After he graduated, he was hired at Ginza Iwa, a Michelin-star restaurant in Tokyo and worked there for 2 years.
He then joined Plan Do See America (a hospitality company) and worked in 2 locations in the United States: Sushi Azabu in New York as a sushi chef and The Den, Azabu Miami as the head sushi chef. He interacted with chefs from various countries, mainly from South America, and actively held collaboration events. He learned a lot about the South American culture during then and took the time to experiment with adding the essence of Miami (inspired by South American culture) to traditional sushi techniques.
In 2020, Yasu and his wife opened their first sushi restaurant, Sushi Yasu Tanaka by Masumura in MIA Market.


This is a Maguro (Tuna) Demonstration. Each part of the tuna offers a different and wonderful flavor.
